It's almost time for our big girl to start school! I can't believe that she'll be going to preschool next week... HOW!? I can't say that I remember my first day of school but I know my Mama does! I want to soak up every single step she takes that day and hear all about what she learned and who she met and the friends she made! Ugh, I just can't wait to see her face once she's home! You know how you can smell something and immediately be taken back to your childhood? Me too. It's such a crazy sensation and food is the number one thing that does that for me! I can remember being at my aunt and uncles farm with my cousins sitting on these ginormous rocks they had by the cows eating watermelon every single time I smell watermelon!
One of my favorite memories growing up looking back now was sitting at the dinner table after school every single night together. I may not have always loved it when I was a teenager, but what did I know!? I hope when Emily is older she can have the same sweet memories, too.
Scott can't stand the smell of sauerkraut but I love it, always have, and Eckrich Smoked Sausage and sauerkraut was my all time favorite meal growing up. My whole family loved it. The nights we had it for dinner I was the last one up from the table instead of the first, haha! Now every single time I smell Eckrich Smoked Sausage cooking up I'm taken right back to family dinner time and I love it. You never realize how special those simple times as a kid are until you have kids of your own.
With two toddlers running around and schedules all over the place sometimes we might not always end up at the dinner table at the same time but we are usually all at the breakfast table! I love being able to make up something quick and easy that can have leftovers at the end for the kiddos. One of their favorite breakfasts is Eckrich Smoked Sausage and potatoes! Super simple, quick, and something that we always have on hand. Anyone with kiddos understands how important any time saver is, right!?
Here's what you'll need for this super simple recipe:
- Eckrich Smoked Sausage (found in the Deli section at your local grocery store)
- Small potatoes of your choice
- Shredded cheese
- Garlic and Onion powder (optional)
- Cut Eckrich Smoked Sausage in half inch links. Cook sausage on medium heat in a skillet until done. Square potatoes, fan fry until done adding all seasoning if preferred. Combine Eckrich Smoked Sausage and potatoes in one pan or a serving dish, top with shredded cheese. Serve with ketchup if your kids are obsessed like mine are.
A little tip: Don't mix in all your Eckrich sausage with your potatoes. Save some for other dishes and it cuts down your prep time even more! There are SO many dishes you can make with sausage.
Why do I love Eckrich sausage so much? Well, one like I mentioned above, it's nostalgic for me, something I can bring into my kids' childhood from my own.
